Salad Mania || Chaitime

The popular GOT phrase – ‘Winter is coming’ is soon going to be taking a long vacation. Although we are under a cold spell at the moment, it’s safe to say that the season of Cherry Blossoms is right around the corner. Spring is my favorite season of the year. This is mostly because my name literally means ‘the season of Spring’ (wink! wink!) but also because of the colorful vibe that you can always see and feel around you. It’s hard to remain depressed during this season because there’s such a lively uplifting buzz in the air around you all the time, both literally and figuratively. 😉

As color returns to the landscape, Spring is an excellent time to bring out the master-chef in you and make vibrant-looking, exotic-tasting salads with a variety of fresh in-season fruits and vegetables. So put on that culinary cap of yours and whip up some refreshing salads! Here are a few light and bright salad recipes to celebrate the onset of the season with. Enjoy! 🙂

Carrot ‘Beringer’ Salad

The rawness of fresh carrots, the tang of berries, and the mild spiciness of aromatic ginger leaves your palate craving for more! And oh, so pretty!!!

Ingredients

Grated Carrots – 3 cups

Chopped Strawberries – 1 cup

Blueberries – 1 cup

Chopped Cilantro – 2 tbsp

Grated Ginger – 1 tbsp

Extra Virgin Olive Oil – 1 tbsp

Lemon juice – 1 tbsp

Italian seasoning – 1 tbsp

Pepper – 1 tsp

Salt – as needed

Method

  1. Combine grated carrots, chopped strawberries, blueberries, cilantro, ginger, olive oil and lemon juice. Season well. Enjoy!

Note: Feel free to pick berries of your choice from the big berry clan.

Pineapple Paprika Salad

Be ready to get thrilled by the exotic taste of fresh pineapple and spicy zing of ground paprika! Simple yet so delicious!

Ingredients

Chopped Pineapple – 2 cups

Chopped Cilantro – 2 tbsp

Orange zest – 1 tbsp

Chopped Basil – 1 tbsp

Extra Virgin Olive Oil – 1 tbsp

Paprika – ½ tsp

Salt – as needed

Method

  1. Combine chopped pineapple, cilantro, Orange zest, basil and olive oil. Season well. Enjoy!

Egg Cuke Salad

This one here, tops my most-weird-concoctions list but guess what, it works like a charm! The unique combination of boiled eggs, raw cucumbers and steamed sugar snap peas seasoned with one of my favorite Indian masalas – The Kitchen King Masala, is totally healthy and 100% yummy!

Ingredients

Chopped Boiled Eggs – 4 eggs

Chopped Cucumbers – 1

Steamed  Whole Sugar Snap Peas – 1 cup

Chopped Cilantro – 2 tbsp

Unsalted Pistachios – 1/2 cup

Lemon juice – 1 tbsp

Kitchen King Masala – 1 tsp

Pepper – ½ tsp

Salt – as needed

Method

  1. Combine chopped eggs, cucumbers, whole sugar snap peas, and cilantro. Season well. Enjoy!

Note: Egg-Cuke Salad tastes equally delicious both warm and cold. Take your pick!
